'Healthy' Rocky Road

This is such a simple, easy and delicious recipe. It's packed with taste and texture and totally versatile! You can add practically anything you want to the base.

Rocky Road

Serves: 12 small bites

Ingredients

For the Base

  • 75g chocolate ( I used 72% )

  • 30g almond butter

  • 7g honey

  • 15g coconut oil

  • 1/8tsp vanilla

Mix-ins

  • 60g digestives

  • 20g mini marshmallows

  • 30g raisins

  • 20g goji berries

  • 20g roasted almonds

  • 15g milled flaxseeds ( I used a milled goji berry, pumpkin seed and flaxseed mix from Aldi ), to bind everything and pick up the last scrapes of chocolate mixture

  • mixed seeds, to sprinkle

  • sea salt, to sprinkle

Method

- Simply melt all the base ingredients together in a small sauce pan. Scrape the mixture into a bowl.

- Add all the mix-ins and stir to coat everything until there is no loose chocolate at the bottom of the bowl.

- line an appropriate sized pan with baking paper. Press the rocky road mixture into the pan with a spatula. Sprinkle some sea salt on top and chill for at least and hour before cutting into 12 small squares- or whatever size you like!
