Orange Flapjacks

Recently i've been getting bored of breakfast and was sick of having the same thing every morning. I would end up stressing about what to eat that I would run out of time to eat something proper and just grab some cheap snack bar or something like, oh I dunno, a chocolate muffin. What? did I say that. Noooo...

That was when I realised, right. Something's gotta change. I gotta come up with something that I will look forward to eating. Something that is healthy and quick. A good replacement for a chocolate cadburys cereal bar. After a lot of researching and googling and browsing Tesco's food magazines, this recipe was created.

So I hope you like these. You can top these with melted dark chocolate or raw chocolate as I found compliments these bars nicely from the orange flavour within them.
Orange Flapjacks
Serves:8 bars
Ingredients
150g oats (GF certified, if needed )
45ml coconut oil
50g honey
50g almond butter *( I just quickly made some myself )
50g raisins
15g goji berries
75g dates, chopped
1 small apple, grated
1/2 orange, zest
25g mixed seeds
optional chocolate chunks ( 70 percent or more )
Method
- Preheat the oven to 160 degrees celcius/320F, fan.
- Line a pan with tin foil or baking paper.
- Combine all the ingredients, except the coconut oil.
- Once everything comes together to form a dough-like texture, knead in the coconut oil. You can use a spoon but I find it much easier to just get my hands in there.
- Press the mixture as firmly as you can into the pan and smoothen the top with a spatula. Sprinkle some optional dark chocolate on top and press them into the mixture.

- Bake it in the oven for 20-25 minutes or until golden on top.
- Let it cool for 10 minutes before removing form the pan and cutting into bars,while still warm.
- let the bars cool and harden. These were gone within a week but i'm sure that these will last longer.
* To make your own almond butter, simply toast almond at 180 degrees for 10-15 minutes before blending them in a high speed blender until it becomes a smooth butter.
