Pecan Pie Bars ( Raw, Paleo, Gluten free, Vegan )

Raw, paleo, vegan, gluten-free eh what else, raw...did I say that? okay, these are amazing. so quick and easy and satisfies a sweet craving and is so much healthier.
Stress-free and only use a blender and pan to make these ( unless you soak the dates, then you need a bowl).
I have these as a snack but go for it as a dessert, or breakfast? why not...



Salted Caramel Tart
Serves: 1 large tart ( In the photo, I divided the recipe by 4 )
Ingredients
For the base
15g dates
15g raisins
15g dried apricots, or other dried fruit
30g walnuts
15g oats
1 tsp maple syrup
splash water, if needed
milled flaxseeds
For the Caramel
180g dates ( soaked in medal water if they're not soft and squishy )
125ml coconut oil
80ml coconut water
2tbsp almond butter
30ml maple syrup
1/8tsp salt flakes
Toasted pecans, to sprinkle
Chocolate Topping, optional
85g coconut oil, melted
45g cacao powder
15g lucuma powder
20g health powder ( mine was a mix of cacao, sunflower seeds, baobab and flax )
20g maple syrup
2 tsp vanilla
salt, to sprinkle
Method
- Line a pan of your size with baking paper or tin foil.
- Blitz the base ingredients until the nuts are finely chopped and it becomes a paste-like texture.
- Press the base into the pan firmly and as smoothly as you can.
- For the caramel, blend the dates first until they are fully blended. Then simply add all the remaining ingredients to the blender. Spread the caramel over the base. Sprinkle the pecans on top and chill!
- Optional, Whisk all the ingredients for the chocolate together then scoop over the caramel and evenly spread. Sprinkle some salt on top and chill.
- Chill for a few hours. and there ya go! easy peasy.
