Fig and Goats Cheese Salad

I first tried this combination of unusual ingredients together at a restaurant in Sweden. Unusual right? it was so good I asked for a second one, it felt like I was eating dessert. I don't - didn't - even like goats cheese or rocket ( the original came with rocket which probably tastes nicer than spinach, so you can change it ), to add to the unusualness of this situation. But everything worked great however, personally, rocket on it's own is yuck and figs on their own are yuck but together...mmmmm.

So after encountering this unusual situation, I recreated it at home which was so simple and tasty that I just had to pop it on here.
This is no genius recipe and, after googling now, realised it's been made hundreds of times before, but I was so excited about this and didn't want to forget about the salad, I needed to add it.
So, I guess, more like an idea rather than a recipe...
Fig and Goats cheese Salad
Serves: 2
Ingredients
4 fligs, sliced into quarters
50g spinah, or rocket
75g soft goat's cheese, crumbled
40g walnuts, lightly toasted
balsamic vinegar or glaze, to dress
olive oil, to drizzle
salt flakes, to serve
Method
- Lay the greens between two bowls.
- Layer the figs on top and crumble over the goats cheese in big chunks.
- Crush the walnuts on top. Drizzle over the olive oil and balsamic before sprinkling with a touch of salt. You could add pomegranate seeds on top for an extra crunch too.
