Superfood Blueberry energy bites

I've already spent half an hour making this post and then what has to happen? Oh there was an error and the page had to refresh. GREAT. So i'm not really in the mood spending another half an hour writing the same stuff.
Well these energy balls can be made raw or baked with slightly different methods. I will admit the texture of the raw version is better however they taste more... raw? that sounds stupid now doesn't it?
Where as the baked version taste more toasted and mmm. Just like raw almond don't have much taste until you toast them in the oven until golden and they just transform! they're crunchy with an amazing taste that just warms you up. Anyway like that, however the texture is slightly... umm rubbery, I guess. But it's totally up to you. Try both- pick a favourite.

Superfood Blueberry Energy Bites
Serves: 8 balls (about 29g)
Ingredients
50g blueberries
50g oats
25g maple syrup
25g coconut oil
25g mixed seeds
25g almonds
12g chia seeds
12g ground almonds
12g raisins
12g goji berries
Method
- Preheat a fan oven to 180 degrees celcius. Line a baking tray with baking paper.
- Combine the blueberries, coconut oil and maple syrup in a small saucepan. Combine over a medium low heat until the blueberries swell and everything is well combined.
- Add to this mixture to a blender alongside the remaining ingredients.

- Blitz the mix into a coarse paste so there's a few lumps left. You can blend it more if you like but i think it just adds to the texture and helps them to be less 'rubbery' once baked.

- Scoop the paste into 8 similar sized balls and place them on the baking tray. Bake for 18 minutes.

For the raw version: Skip the heating the blueberries in a saucepan step and just simply chuck everything into the blender, whizz it a little, scoop, shape and BAM you just gotta chill them and easy peasy you got your energy bites.
