Thai-inspired chicken wrap

This is super tasty and a great healthy lunch. Or an easy, quick dinner. Whatever you like, have it for breakfast! why not? It's so more-ish from the satay sauce. Well maybe it's not Satay but it's a sauce with peanut butter in it so whatever that is- it's amazing
What else can I say about this dish? Not much really. It's Thai and a wrap and well it's got chicken in it and... yea okay i'm going to stop now and just give you the recipe. Cause that's the real reason we're here, right?
Thai Chicken Wrap
Serves: 2
Ingredients
2 packets of pre-cooked Thai chicken (my favourite is M&S chilli coconut chicken), sliced
1 medium carrot, cut into chopsticks
Mangetout/peppers, optional
2 spring onions/ half red onion
small handful
coriander leaves
1 small red chilli, sliced
knob ginger, sliced or grated
1 small garlic clove
half lemon grass stalk, minced
wholemeal wraps, to serve
squeeze lime
For the sauce
40g sweet chilli sauce
1 tsp peanut butter
2 tsp coconut milk ( Almond/soy milk or water works too )
1 tsp soy sauce
1 tsp Sriracha, optional
Method
- Heat a little bit of oil in a small pan over medium-high heat. Once hot, add the onions and fry until slightly softened.
- Meanwhile, whisk the sauce ingredients together.
- Add in the garlic, chilli, ginger and lemongrass. For a further few minutes. Add in the carrots/beans/peppers.
- Once they are softened, add in the sauce and stir to coat everything. Finally, add in the sliced chicken and heat it through.
- Serve in wraps with coriander and a squeeze of lime.
