Nutty Chocolate Chip Granola Bar

Hello everyone! oh. I don't usually say that. Well today i'm going to add to my never ending collection. Granola bars! these are similar to my last but without the rice crops and a slight more warming taste from the orange and the cinnamon.

Apart from a little rice syrup to bind it, these wholesome bars are naturally sweetened and packed with goodness ( how many times do I say that! ). But due to this they are a little crumbly so if you're planning on taking these out with you, I recommend wrapping them up.

These are so simple to make I would question, why wouldn't you make these! it will look like standard muesli at the start then just stir in the wet and get everything all sticky and BAM, that's it. Sometimes I think this uncooked mixture is so good I just eat it like that.

Nutty Chocolate Chip Granola Bars

Serves: 24 bars

Ingredients

  • 75g almonds

  • 225g hazlenuts, chopped roughly

  • 180g jumbo oats

  • 140g mixed seeds

  • 160g chia seeds

  • 75g raisins

  • 88g dark chocolate with orange ( 70% or more )*see notes

  • 300g brown rice syrup (or honey)

  • 1/4tsp salt

  • 30g coconut oil, melted

  • 1tsp cinnamon

Method

- Preheat the oven to 180 degrees, fan

- Combine all the dry ingredients and stir until everything is evenly distributed

- Pour in the brown rice syrup and coconut oil. You can use a spoon or just get your hands in there and get sticky to ensure everything is combined.

- Press the mixture into a pan of your choice and press it in( I use a spatula).

- Bake in the oven for 15-20 minutes or until golden around the edges, depending on what size of pan you have.

*Notes - if you don't have or can't find orange chocolate simply add 3 tsp grated orange zest.
