Coconut Lemon Energy Balls

Yes that is toilet roll they are sitting on and, No I don't care. I ran out of baking paper and wasn't exactly gonna run down to the shops just for that now. Shh I don't care the shop is 5 mins away..to walk.
These lemon bombs are refreshing and zesty with a lovely light texture. You could say they are almost mousse-like.
Coconut Lemon Energy Balls
Ingredients
300g soaked cashews
250g maple syrup
60ml lemon juice
2 tbspn lemon zest
2 tsp vanilla
144g almond flour
37g coconut flour
90g dessicated coconut

Method

Measure out all your ingredients and pop them into a blender.

You know when the mixture is ready ad it will form a soft dough.

Roll the dough into 12 balls. Sprinkle a bit of desiccated coconut onto a clean surface and roll the balls in it. Place the energy balls in an air tight container and store them in a fridge.

And there you have it. Store these in the fridge for up to a week. Maybe two but since they have soaked cashews in them, they might start tasting a bit funny after that. It's really odd how raw cashews last forever yet as soon as you soak them, after a while it's like they, go-off?
