Simple Almond Granola

I love granola for breakfast. It's quick, hastle-free and tasty with enough sweetness to satisfy our needs. Although the average sugar content is 20g or more per 100g in shop bought granola. And it's not the good kind of sugar either. Yes okay all sugar is not particularly the best for you but at least we can get better types than others.

This is a really easy and simple base to make in large batches at home to replace that nasty shop-bought stuff for this! you can add anything you want to it, so it suits your preferences.

Although I will warn you before you go through the hastle of making it and then getting disappointed (i've had enough of that myself) you can taste the coconut oil in it. If that doesn't bother you then go ahead and try this recipe but if it does (like I know some people really hate coconut oil and anything to do with it) then perhaps try one of my spiced granolas where the taste is masked.

Simple Almond Granola

Serves: (35g)

Ingredients


  • 180g rolled oats ( The kind that isn't in bits and powdery. )

  • 70g coconut oil

  • 50g coconut sugar

  • 65g honey

  • salt

  • 96g chopped almonds

  • 50g mixed seeds

  • 50g cranberries (optional)


Method


-Preheat the oven to 180 degrees Celsius (fan oven).

- Place the honey and coconut oil in a saucepan and melt over a medium heat. Make sure to stir it constantly to prevent it from burning.

- Take it off the heat and stir through the coconut sugar until it's dissolved.

- Pour this over the combined almonds, seeds, oats and salt. Stir it all together until everything's coated.

- Scatter it over a lined baking tray. Bake in the oven until you can easily smell it and it appears golden on top. I don't put a time as it can vary so much and wouldn't want anyone disappointed!

- Once the granola is out of the oven and cooled, break it apart and scatter through the cranberries.

*Notes- If you want chunky granola just leave it in the oven until it's ready. If not stir in occasionally as it cooks. Each serving contains 139 Calories.
