Chicken strawberry feta salad - with a creamy poppyseed dressing.

Days are getting lighter and that little bit warmer. We start to edge away from the hearty warming soups and cozy night casseroles. Instead what we need is a beautiful, refreshing and crisp salad. Amiright?

This wonderful salad combines sweet flavours from the strawberries mixed with saltiness from the feta, with great nutritional value coming from the golden roasted almonds and avocado.

Chicken strawberry feta salad
-with a creamy poppyseed dressing
Serves: 2
Ingredients
For the salad
75g chicken
1tbspn olive oil
2 handfuls toasted almonds
1 avocado
2 handfuls strawberries
60g spinach
50g feta cheese
salt and pepper, to season
For the dressing
1/2 tsp mustard
1 tsp maple syrup
1 heaped tbsp poppy seeds
1/2tsp vinegar
30ml water
65g yoghurt
Method
-Make the dressing by simply combining everything in a bowl.
-Heat the oil in a frying pan on a medium heat. Once hot brown the chicken on all sides until golden brown. reduce the heat and cook until no longer pink.
- slice the strawberries and almonds. Cut the avocado into cubes.
-Place the spinach in the bowl. Then throw in the chicken. Sprinkle over the almonds and strawberries. Crumble in the feta cheese and finally add the avocado.
- Pour over the dressing and give everything a good toss.
