Apple Cranberry Chicken Salad

I've seen this combination of food for a salad many times before but often disagreed it as i never considered it being something that worked. I guess it got to the point where i'd seen it so many times, I thought Right. That's it. I'm gonna make it.
After trying it and thinking it worked fairly well I made a few adjustments that personally I think it makes it a lot tastier. Perfected with the accompaniment of a creamy poppyseed dressing this salad is so uplifting and refreshing.
This salad explores lovely flavours of sweet from the cranberries and a slight sharpness from the apples. There's a wide variety of textures too: a smooth creaminess from the cheese and the contrasting crunch of the nuts. Listen to me I sound like Michel roux!
Apple Cranberry Chicken Salad
Serves: 2
Ingredients
For the Salad
1 cooked chicken breast, sliced
1 apple ( I love jazz apples), sliced
30g cranberries
30g pecan nuts, lightly toasted
40g feta cheese, crumbled
60g spinach
black pepper, to taste
For the dressing:
1/2 tsp mustard
1 tsp maple syrup
1 heaped tbsp poppy seeds
1/2tsp vinegar
30ml water
65g yoghurt
Method
- Whisk all the ingredients for the dressing together in a small bowl.
- Arrange the ingredients for the salad, except the pecans, between two bowls then drizzle over the dressing.
- You can either leave it like this to look pretty or give it all a good toss so that the dressing coats everything.
- Sprinkle generously with black pepper and lastly add the pecan nuts on top for a nice crunch.
