Feta and Spinach Pancakes with Smoked Salmon
Serves: 2-3
Ingredients
50g sifted wholemeal flour
1/8 tsp baking soda
1 tsp baking powder
1 egg
25g spinach
125g 0% fat Greek yoghurt
handful parsley, finely chopped
handful of dill, finely chopped
1 spring onion, finely sliced
80g feta
For the salad
1/4 cucumber, diced
6 radishes, finely sliced
1 shallot, finely minced
For the Dressing
25ml lemon juice
1 1/2 tsp wholegrain mustard
50ml extra virgin olive oil
sea salt flakes
smoked salmon and poached eggs, to serve
Method
- First mix all the salad ingredients together and in a small bowl and set aside.
- Make the salad by combining all the ingredients together in a bowl and drizzle over half of the dressing. Season generously with black pepper and toss everything together.
- Make the pancakes by whisking the egg yolk and yoghurt in a large bowl.
- Sieve in the dry ingredients and whisk until smooth.
- Add in the spinach, herbs and spring onions.
- Crumble in the feta cheese.
- In a separate bowl, whisk the egg white until soft peaks form then fold into the batter.
- Heat some vegetable oil in a large frying pan. Once hot, add large spoonfuls of the batter into the pan and fry for 3-4 minutes before flipping. Repeat this until the pancakes are golden or browned on each side.
- Serve on a plate with a spoonful of salad. Layer the smoked salmon on top and if you want ( I highly recommend ), place a poached egg on top.
- Drizzle the remainder of the dressing around the pancake and sprinkle some black pepper on top!
