Indian Spiced Fishcakes with Raita and Mango Chutney
Serves: 2
Ingredients
180g salmon fillets, skin removed and cut into chunks
150g parsnips, chopped
2 cloves garlic, minced
1 red chilli, minced
knob ginger, minced
2 spring onions, finely sliced
1/2 tsp turmeric
1 tsp coriander seeds
1 tsp ground cinnamon
2 tsp curry paste
handful coriander, finely chopped
1 egg
1 heaped tsp wholemeal flour
groundnut oil
For the Raita
150g 0 fat yoghurt
2 tsp cumin seeds
2 mint stalks, leaves removed and chopped
1/4 cucumber, diced
pinch salt
To serve
2 tbsp mango chutney
11/2 tbsp raisins
salad
lime wedges
naan or flatbreads
Method
- In a small bowl, mix the ingredients together for the raita then set aside in the fridge while we prepare the rest of the dish.
- In a ramekin, combine the chutney and raisins. Set aside.
- Start making the fishcakes by boiling some water and setting a sieve over it. Place the chopped parsnips in the sieve and cover. Steam for 10 minutes.
- Meanwhile, heat a drizzle of groundnut oil in a large frying pan. Add the onions, ginger, garlic and chilli. Fry until softened and aromatic.
- Stir in the spices and paste and fry for 30 seconds before adding in the coriander and parsnips.
- Add in the salmon fillet chunks. Add more oil or water if needed. Stir fry everything together for 5-7 minutes.
- Remove the pan from the heat and mash the mixture with the egg and flour using a fork or potato masher. It should come together into a chunky paste.
- Roll the paste into 6 balls and flatten with your palms.
- Drizzle a bit more oil in the pan over medium-high heat. Once hot, add the fishcakes and cook for 5 minutes or until nicely coloured. Flip them and cook until coloured also.
- To serve, add some salad leaves to a plate. Divide the fishcakes between two plates. Serve with a dollop of raita, a spoonful of chutney ( and extra to go on the side of course ), a wedge of lime and some naan to mop everything up!
