Chicken Chow Mein

I decided to add this recipe to my blog since I tried my first ever chow mien from Tesco. I'm not a huge fan of Chinese and especially not dishes like this but I needed a quick dinner and this was in the reduced section so I thought, why not. I was thoroughly surprised after eating it because I really enjoyed it and decided to make one myself.
I found a basic recipe and after following it exactly, I wasn't too impressed and decided not to add it to my blog, but at the last minute I added curry powder and it seemed to change the whole dish. I couldn't stop eating it after that. Maybe its just me but I hope you like it as much as I did.



Chicken Chow Mein
Serves: 2
Ingredients
half pack dried noodles ( about 112g ) *
1 tbsp olive oil
1 chicken, cut into chunks
1 cup red cabbage, roughly chopped
handful shiitake mushrooms ( I just used normal mushrooms )
1 large carrot, cut into chop sticks
35g bean sprouts
1 tbsp ginger, minced ( you can use less but I prefer a lot )
2 cloves garlic, minced
1 red chilli, micced
2 spring onions, sliced diagonally
1-2 tbsp curry powder
black pepper, to taste
For the marinade
1 tbsp fish sauce
4 tbsp soy sauce
1 tsp honey
2 tsp sesame oil
2 tbsp sherry ( you can use rice wine instead )
2 tsp Sriracha ,plus more to serve
1 tbsp water

Method
- Start by combing all the sauce ingredients together in a medium-sized bowl. Add the chicken chunks and stir everything together. Set aside until you are ready to begin cooking.
- Heat the oil in a medium-sized frying pan. Remove the chicken chunks from the marinade and add to the pan once hot. Brown all over.
- Add the ginger, chilli and garlic. Cook until fragrant.
- Chuck in the cabbage. mushrooms and carrots. Cover and stir every so often. Cook until softened.
- Cook the noodles according to the instructions. Add them to the pan and use tongs to combine everything together. Pour in the remaining marinade and stir so it coats everything.
- Add in the spring onions, bean sprouts and curry powder. Combine everything together thoroughly ( it may take a while depending on what type of noodles you use ).
- Heat everything through, adding a splash more water if the noodles get too dry. Serve with a drizzle of more soy sauce and Sriracha or eat it as it is!
* I used wholewheat vermicelli noodles but you can use literally any type of noodles you like or can find. I think this recipe would work better with thicker noodles but I went for the healthier option :)
