Steak with Goats Cheese Cream and Apple salad

This is another recipe I managed to find through the stacks of old food magazines my gran keeps in her cupboard in Sweden. Although it looked simple, I just thought the flavours would work well and with a few tweaks of my own, this could be a very nice and simple dish. Perfect for any sort of weather and deliciously healthy. You may think it sounds weird at first but give it a try and let me know what you think in the comments below!


Steak with Goat Cheese Cream, 'Skinny Fries' and an Apple salad
serves: 2
Ingredients
2 rump steaks
2 tbsp mixed dried herbs
black pepper, to season
olive oil, to fry
For the Goats Cheese Cream
75g goats cheese ( y favourite is chèvre )
1/2 cup greek yoghurt
1 clove garlic, minced
1/4 lemon, juice and zest
black pepper, to taste
For the Salad
1 apple, diced into cubes
4 steamed beetroots
1 small red onion, sliced ( or half a normal sized )
2 large handfuls rocket
1 dessert spoon olive oil
high quality balsamic vinegar, to drizzle*
To Serve
2 parsnips, cut into matchsticks
drizzle oil
salt and black pepper, to season
* The one i used was quite thick and sweet but if you don't have this, just add a bit of honey instead
Method
- Start by making the parsnip fries. Preheat the oven to 200 degrees c, fan. Pop the matchsticks onto a lined tray and drizzle over the oil. season and place them in the oven to bake for 1 hour.
- Make the goats cheese cream by simply blending all the ingredients into a blender until smooth and creamy. Remove to a bowl and pop it in the fridge.
- Next, prepare the salad ingredients then pop it all in a bowl and stir everything together. Give the salad a good drizzle of balsamic vinegar.
- Finally, heat the oil in a large frying pan. Once hot, add the steaks and cook for a few minutes of each side, depending on how rare you like them.
- Serve the steaks with a heap of the salad, the fries and a dollop of the cream.
