Thai Salmon Burgers
Serves: 4 burgers
Ingredients
For the burgers
300g salmon fillet ( the fresher the tastier )
30g egg
1 lemongrass stalk
1/2 lime, juiced and zested
1 small red chilli, minced
1 tbsp grated ginger
2 cloves garlic, minced
35g breadcrumbs ( I blitzed wholegrain crackers )
1/2 tsp fish sauce
handful coriander
1 tbsp spelt flour
1 tsp avocado oil ( sesame or olive works as well )
Guacamole
2 small avocados, flesh scooped out
1/4c mint
2 tbsp roasted peanuts
1 clove garlic
25ml sesame oil
sea salt
Salsa
1 small red chilli, minced
1 large tomato, chopped
1/2 red onion, finely minced
80g mango, diced into cubes * yellow pepper can be replaced
1 tsp sugar
1 lime, juiced
To serve
rocket
quarter cucumber, sliced
greek yoghurt, sweet chilli sauce or even ketchup!
wholemeal sandwich thins ( I've tried it with buns but I feel like there's too much bread which detracts from the taste of the burger and it gets too thick to eat , but that's just a personal preference!)
Method
- Preheat the grill to the middle heat. Line a tray with tin foil.
- Pop all the burger ingredients, except the breadcrumbs, into the blender and blitz. Make sure you don't over-blitz it! otherwise, it will go rubbery in texture. You still want it to be a bit chunky.
- Take four handfuls of the mixture and roll it into a ball. Flatten with the palm of your hands and evenly space the burgers on the tray.
- Grill the burgers for about 8 minutes on each side. Remove from the oven and set aside.
- For the guacamole, add all the ingredients to a medium sized bowl and gently mash the avocado. Set aside.
- For the salsa simply combine everything in a small bowl and set aside.
- Pop each burger into the bread and grill for a further 5 minutes to toast and heat everything through. Top with some cucumber slices, a dollop of guacamole, a sprinkle of salsa. Finish with some rocket and BAM you've got yourself a DELICIOUS burger.
These are so delicious on their own and I personally don't think they need any sauce but you can add a small blob of yoghurt on top and/or sweet chilli- just try and see what you prefer!
