Ultimate Steak Sandwich
Serves: 2
Ingredients
2 slices wholemeal bread
handful tomatoes, halved
rocket
guacamole ( I lightly mashed avocado with some garlic, lime, coriander and seasoning )
1/4 red onion, sliced
natural or greek yoghurt, to serve
lime to serve
For the steak
1 steak. sliced
1 tbsp soy sauce
1 tbsp Sriracha
1 tbsp ginger
1 garlic clove, minced
1 flat tbsp sugar
1 tbsp rice wine vinegar
2 tsp sesame oil
black pepper
Method
- Start by combing all the marinade ingredients for the steak in a medium sized bowl. Add the beef strips and use your hands to work everything into the steak. Cover and marinate for 10 minutes.
- Meanwhile, preheat the oven to 180 degrees celsius, fan. Line a tray with tin foil.
- Pop the bread slices on the tray. Layer some rocket leaves onto one slice of bread, followed by red onion and tomatoes.
- Scoop the steak from the bowl and fry the steak until your'e desired rareness ( I had mine medium rare ).
You can gently boil down the marinade and serve with the sandwich for more flavour/sauce.
- Pop the steak strips over the tomatoes before finishing the sandwich with a good dollop of smashed avocado. Press on the top slice on and cook it in the oven until the bread is slightly golden.
I pressed my hand down on the sandwich a few times during the cooking process to flatten everything together
( You can also pop the uncooked sandwich in a toast machine instead of using the oven! )
- Serve with some salad and lime and enjoy as a light dinner or hearty lunch!
