Sun-dried tomato Pasta

Hello! I've just realised that i've never actually opened a blog with a friendly greeting. So i'm doing it now
Sun-dried tomato Pasta.
This dish is really easy and super tasty. And yes there's a lot of oil but olive oil is super healthy when consumed raw, in it's pure form.
I've used homemade chilli garlic oil but you can use just plain. However I reeeally recommend making this oil because one it's made, it lasts forever and the longer you leave it the tastier it gets so it's just a win win all the way.
Sun-dried Tomato Pasta
Serves: 2
Ingredients
250g cooked spaghetti ( I used wholemeal )
1 large chicken breast or 2 small, cut into chunks
50ml white wine
120g sun dried tomatoes, roughly chopped
half onion, diced
2 garlic cloves, minced
2 huge handfuls spinach
small knob of butter
drizzle of high quality olive oil, OR homemade chilli garlic oil
salt and pepper, to season
basil and parmesan, to serve
Hot sauce (Optional) - I pour tabasco on top as well, but then again, I pour tabasco onto of everything
Method
- heat the knob of butter in a medium sized frying pan over a medium-high heat. Once hot, add the garlic and fry briefly about 30 seconds, just so the aromas are released.
- Add the sun-dried tomatoes and onions. fry until the onions have softened slightly.
- Add in the chicken chunks and stir everything together. Season well.
- Once the chicken is cooked all over on the outside, add in the wine and bring it to a boil. Reduce the heat to a simmer and let it reduce, about 5-7 minutes.

- Add in the spinach and cover the pan with a lid or tin foil to let the spinach soften.

- Check every few minutes and stir occasionally until it looks like this...

- Serve over the pasta with a GOOD drizzle of the olive oil. Sprinkle over the parmesan and as much basil as you like ( I used about half a plant...just on my plate).
