Marinated Sweet Chilli and Lime Salmon

This is actually a really simple dish. I was once in a rush for dinner and just cooked up a salmon fillet and some microwavable rice. After getting about halfway I decided i'd had enough. I had to have some sauce...
So I figured sweet chilli sauce would be a good option as the salmon was thai marinated already ( although I couldn't taste anything except salmon). O-mi-gosh, I didn't realise how well sweet chilli and salmon went!
Then after a little creative thinking of what goes with sweet chilli sauce, I gave a good squeeze of lime over my salmon and rice.

I thought there was a lot of potential here for a easy tasty healthy dish. So I planned a day where I had time and experimented a little to develop this dish to something blog-worthy since a blog saying: "Salmon with sweet chilli sauce", consisting of two ingredients, sounded a little boring...
Of course I healthified the dish and well this is the result.
Marinated Sweet Chilli and Lime Salmon
Serves: 2
Ingredients
For the marinade
2 salmon fillets
2 garlic cloves, minced
2tsp grated ginger
2 tsp dark soy sauce
1 tsp fish sauce
1tsp honey
1tsp sesame oil
salt and pepper, to season
To serve
healthy grains ( I used a mix of bulgar wheat and quinoa ), or rice
steamed broccoli
sweet chilli sauce, lime juice, coriander and sesame oil, to dress
Method
- The night before, combine all the marinade ingredients together and pour it over the salmon fillets in a lined, deep set pan.
- Use your fingers to rub the marinade into the salmon then cover and place in the fridge. You can marinate this on the day for a couple of hours or even 1 is better.
- When you're ready to serve the dish. Preheat the oven to 180 degrees. Drain the salmon fillets from the marinade.
- Once the oven has finished heating up, pop the fillets in the oven for 25-30 minutes
- Meanwhile, cook the grain.
- Boil some water and set a sieve over it. Add the broccoli to the sieve and cover with a lid. Leave it to cook until tender with a little crunch.
- Dress the grain in a good drizzle of sesame oil and fluff it all together
- Take the fillets out of the oven when they are flaky on the inside and no longer shiny ( like jelly looking ).
- Add a handful of spinach to a bowl. Pour the grains or rice on top. Add the salmon to once side and the broccoli beside. Pour over the sweet chilli sauce and a squeeze of lime.
- Sprinkle the coriander and serve it up.
