Salmon with Garlic Sweet Potato Mash and Honey Lemon Sauce

Salmon is rich in essential vitamins and decreases the risk of coronary disease and certain cancers. It is loaded with Omega 3 Fatty Acids and high in vitamin B. So when you can eat something so healthy and tasty it's a win-win situation.
It is a little more effort for this dish but after that, you pop it into the oven and you just have to wait for it to be finished cooking. Then pop the sweet potato and carrots in the blender, pop them not the plate and serve it up with the mouth-watering sauce.

Salmon with garlic Sweet Potato Mash and Honey Lemon Sauce
Serves: 2
Ingredients
For the Fish ( Marinade )
2 salmon fillets
1tbsp lemon juice
2 tsp smoked paprika
1tsp oregano
1 1/2 teaspoons of oil
salt and pepper, to taste
For the mash
150g carrots ( about 3 medium carrots) peeled and chopped into chunks
150g sweet potato, peeled and chopped into chunks
3 garlic cloves, minced ( This sounds like a lot but it just goes- trust me! )
knob butter (15-20g)
season, to taste
For the sauce
45g butter
3tbsp lemon juice
1tsp lemon zest
1 clove garlic
leaves from 5 sprigs of thyme
half a small onion or one shallot
10g honey
season, to taste
Method
- First start by preheating the oven to 200 degrees, fan. cut up the carrots and sweet potatoes into small pieces.
- Line a baking tray with tin foil. Add the sweet potato and carrots.
- Pour the butter over as well as the garlic. Use your hands to coat the butter and garlic over everything. Season to taste.
- Place another sheet of tin foil on top and fold over the edges to conceal the veg into a parcel. Pop in the oven for 45 minutes.
- Line a deep-set baking pan with tin foil or parchment paper. Next, rub the marinade ingredients into the salmon and place it in the fridge.
- Meanwhile, melt the butter in a small pan. Add the garlic and thyme. Fry until fragrant. Add the onions and stir. Cook for a further 4 minutes or until beginning to get soft.
- Add in the lemon juice, and zest and season to taste.
- Remove the sauce to a bowl, stir in the honey and set aside.
- After 30 minutes of the sweet potato cooking, move them to the bottom shelf in the oven and place the fish on the top. Bake for a further 15-18 minutes.
- Once everything is ready, blend the sweet potato ( make sure to scrape any garlic from the tin foil ). I like my mash a bit chunky so I pulse it.
Serve with the sauce, salmon and of course, nothing beats a good bit of rocket underneath. Plus it looks pretty.
