Caribbean Salmon with Mango Salsa

So healthy. So simple. So easy.
With flavours from the Caribbean, this dish is refreshing and not too heavy- perfect for a warm day or as a lighter dinner.

Caribbean Mango-Avacado Salmon
Serves: 2
Ingredients
2 salmon fillets
1tsp lime zest
1 1/2tbsp lime juice
2 cloves garlic, minced
1tsp paprika
1tsp cumin
1/4tsp cinnamon
1/8tsp allspice
1/2tsp curry powder
300g sweet potato *
seasoning
drizzle maple syrup
For the Salsa
1/2 mango, finely diced
1/2 small red onion, finely chopped
1/2 red pepper, finely chopped
7g coriander, chopped
1 red chilli, minced
1/2 avocado, finely diced
2tsp sesame oil
juice of 1/2 lime
Sriracha to serve, optional

Method
- Preheat the oven to 200 degrees, fan. Line a baking tray with parchment paper.
- Chop the sweet potato into strips. scatter on the tray and drizzle the maple syrup over. Season. to taste.

- Place in the oven for 45 minutes or until soft on the inside.
- Line another pan with parchment paper and place salmon fillets inside. squeeze over the lime juice then add the rest of the ingredients for the salmon on top and rub it into the fish.

- Place in the oven, alongside the sweet potatoes, 15-25 minutes ( depending on the size of the fillets) before the sweet potatoes are ready.
- Meanwhile, mix together all the salsa ingredients and stir to evenly distribute the ingredients. Leave in the fridge to rest.

- Serve the salmon on top of the rocket (optional) alongside the sweet potato, lime wedges and the salsa.
* This can be served with coconut rice as well.
* This dish is very versatile too. Instead of this Caribbean-style salsa use a standard tomato salsa and serve with guacamole and sour cream. Change the spices to a chipotle Mexican spiced salmon and serve with lettuce and jalapenos with the sweet potato or tortillas.
