Pasta with Rich Tomato sauce

To be fair it's not genius idea, of course you've heard of this dish before and it's super easy BUT, have you had it with this tomato sauce?

Okay, the sauce takes a little time to make but once it's made you can store it in the fridge for weeks, until it starts to smell a bit funny and...
Anyway this can be made in under 30 minutes. It's just fry, boil and mix!
Pasta with Tomato Sauce
Serves: 3
Ingredients
250g wholewheat spaghetti ( normal is fine too)
1small red onion
250g mushrooms
1tbsp oil
400g tomato sauce ( or my version here )
3 handfuls basil leaves, to serve
grated parmesan cheese, to taste

Method
- Boil some water in a medium pan. Put in the pasta and cook until your desired softness.
- Heat 1 tbsp of olive oil or coconut oil in a large frying pan. Once hot, add the onions and mushrooms. Fry for 5 minutes or until softened.

- Add in the tomato sauce and stir it through. Cook until the sauce begins to bubble then reduce the heat to low. Stir in the grated parmesan cheese and taste to your preference. I use a lot as it really adds depth to this dish but it's totally up to you.
- Strain the pasta once ready, Divide between three bowls and pour 1/3 of the sauce over each bowl. Chop some basil over the top, give it a good season and Voila! ( I know this is Italian ).

*Notes - if you don't mind a slightly heavier dish, this tastes AMAZING with chorizo ( about 225g ) if you fry sliced chorizo in the oil first, wait until the oils in the chorizo is released then add in the rest and stir well so the juices get absorbed into the sauce and vegetables. Continue the rest of the method as normal. Can be served with toasted fennel seeds and lightly toasted pine nuts!
