Ginger Beef & broccoli stir fry

This dish is healthy, packed with ginger and veg with lots of sauce and plenty of flavour. I always end up pouring on more sauce however if it's too much simply half the amount of sauce you use.
Ginger beef and broccoli stir fry
Serves: 2 people
Ingredients
For the stirfry
2 steaks (sirloin is good)
2 tbsp olive oil
thumb length of ginger, peeled
small head of broccoli
4 spring onions, the tops only
1/2 onion
2 handfuls button mushrooms
2 handfuls sugar snaps (or mangetout)
2 cloves garlic
seasoning
For the sauce
2 tbsp soy sauce
1tbsp rice wine vinegar (or mirin)
1tbsp honey
2 tsp fish sauce
1 tbsp cornstarch mixed with 1 tbsp of water
Method
- Dice the onions finely. Cut the ginger into strips and slice the chilli, if you're using it. Cut the mushrooms. I'm not gonna tell you how to for these- you choose! and slice the sugar snaps.

- Slice the steak into strips. Heat the oil in a pan ( or a wok if you wanna be more 'authentic', on medium-high. Once the oil is hot fry the beef until browned on all sides. If you prefer rarer beef, remove it to a bowl and set it aside, but I prefer it well done.
- Slice the onions and add them to the pan. Fry for 2-3 minutes or until beginning to turn translucent.

- Then add in the garlic, ginger and the option of chilli if you like a spicier dish. Fry for a couple of minutes to release their aromas.

- Next add the broccoli...

...And the sugar snaps (or mangetout ) and mushrooms.

- Let this cook until the beans start to soften ever so slightly. Stir together all the ingredients for the sauce. Pour in the sauce and let it bubble for a bit before reducing the temperature t medium-loww an lettingt it gently reduce.

- Serve with a drizzle of sesame oil, sriracha (for more spice- I love spice), spring onions and a squeeze of lime. Here, I've used brown rice for health benefits but you can use noodles or just plain rice.
