Coconut Pineapple Beef Stir-fry

This wonderful dish is perfect for dinner. Its refreshing and healthy with a subtle sweetness from the pineapple paired with the saltiness from the soy sauce.
Coconut Pineapple beef Stir fry
Serves: 2
Ingredients
For the stir fry
1 red bell pepper
1 medium red onion
1 packet of button mushrooms
1 red chilli and 1 green chilli
2 sirloin steaks
1tbsp sesame oil, to fry
100g pineapple
2 cloves garlic
1 inch of grated ginger
coriander and spring onions to serve
For the sauce
40ml coconut milk
1 heaped teaspoon of tomato puree
40ml soy sauce
1tsp paprika
salt and black pepper, adjust to taste
Method

Measure out the sauce ingredients and combine all of it together in a bowl. Gather the spices together.

Cut up the mushrooms, peppers, red onion, pineapple, chillies, ginger and garlic.

Slice up the beef into small strips and season well.
Heat the sauce in a sauce pan and bring to a boil. Then reduce and let it simmer gently and slowly reduce. Take it off the heat once it's thickened slightly.

Heat the oil in a wok (or any frying pan will do, I just used a wok to be fancy :) over a medium-high heat. Once it's hot add in the steak and fry until just browned on the outside.

Add in the mushrooms, peppers, chillies and red onions. fry until soft with a bit of crunch. Don't worry if you over cook or under cook- it's not that important.

Next add in the ginger, garlic and pineapple - all the pale yellow-y stuff really.

Stir in the sauce and let it bubble away. It should continue to reduce and become sticky around everything. Then toss in your beef and coat everything. Cook until the steak is cooked to as much as you desire. Serve with coriander and coconut rice ( you don't have to use coconut rice but OMG it's so amazingg) and garnish with a little spring onion!
